When the opportunity to purchase the venue arose, we had a conversation with the Executive Chef we ultimately selected – Kevin Caudill – about the vision for the menu. We’ve worked with Kevin for several years and have seen his dedication to delicious food. Chef Kevin Caudill has experience from several different restaurants in Summit and has compounded his experience, palate and imagination with some items we wanted to incorporate. Conceptually, the menu is built to inspire our patrons to finding their new favorite meal, so it’s Eclectic! A complimentary mix of items to satisfy any guest.
Many know us from other restaurants in Summit, school gatherings, skiing or simply the grocery store, and most will not be surprised by our new endeavor. As locals for 15 and 20 years respectively, we’ve dreamt of owning a restaurant for many years. We met in food and beverage, have been raising our 2 girls in the hustle and bustle of restaurants, and are overjoyed that our dream is becoming a reality. With combined 40 years in the industry, we want to incorporate the experience we’ve gained in Eclectic Bar and Grill.
Murphy’s/Fun Hog has been a staple in Silverthorne for many years, and we understand there are sentimental feelings, and much curiosity, that have popped up during the past 2 months since it changed hands. We hope to have those sentiments turn in to excitement over the rejuvenation of this long-time staple! The vision for Eclectic is to create a breath of fresh air in our increasingly busy county, while maintaining a local’s friendly menu. To create a space equally suitable for grabbing a quick lunch, having a leisurely family dinner or an evening out with friends.
